Sarah Marshall is going to change the way you think about using hot sauce. Sarah was a social worker in another life, who started hosting cooking classes for kids and families as a means of building connections among individuals in difficult situations. Her passion grew, she became a Master Canner, and out of this, she and her husband Dirk launched Marshall’s Haute Sauce in 2011. They have built an amazing Portland-based operation of small-batch, artisanal hot sauces that are most likely not what you think of when you picture hot sauce. When I met Sarah at the Portland State University Farmer’s Market to pick up our sauce order, she told me I had to try her recipe for Coconut Milk Poached Halibut With Dulse Gremolata – say no more, Sarah; we are in. The tangy ginger with a serrano zip and aromatic lemongrass is harmonious. The dish is delicious and the sauce simply steals the spotlight.
