This product hails from across the pond, and we couldn’t wait for it to arrive. Infused balsamic vinegars are an art form because they require the introduced flavors to both complement and balance the aromas of the vinegar itself – too strong and it’s overpowering; too weak and it feels disappointing. Susie Hamilton Stubber, an Irish chef, started like many small-batch producers, by making a bit of this and that for fun, but her side business soon grew from her home kitchen and farmers markets, to being featured at Harrod’s and winning Great Taste Awards. We’re highlighting a few of Burren Balsamics products over the next few weeks, not only because they’re delicious but because they use all natural infusions and are low or zero-waste, channeling byproducts into jams, among other things.
